Lime Meringue Pie
Ingredients
  • 1 9-inch unbaked pie shell
  • 3 egg yolks
  • 1/2 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups hot water
  • 3 tablespoons butter, melted
  • 1/3 cup lime juice
  • 1 teaspoon grated lime zest

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Place the pie shell in a 9 inch pie plate.
  2. In a medium bowl, beat together the egg yolks, sugar, flour and salt until blended.
  3. Gradually stir in the hot water and melted butter. Add the lime juice and zest.
  4. Pour mixture into the unbaked pie shell.
  5. Bake for 25 minutes in the preheated oven, or until a knife inserted into the center of the filling comes out clean.
  6. Cool on a wire rack. Top with meringue and bake for an additional 10 minutes at 350 degrees F (175 degrees C), or until lightly browned.
