Lime Cilantro Rice
Ingredients
  • 1 cup long-grain white rice
  • 1 cup water
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro

Steps
  1. In a medium saucepan, combine the rice, water, olive oil, and salt. Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer, covered, until all of the liquid has been absorbed and the rice is tender, about 20 minutes.
  3. Stir in the lime juice and cilantro.
  4. Serve warm.
