- 1 cup long-grain white rice
- 1 cup water
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 2 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro
- In a medium saucepan, combine the rice, water, olive oil, and salt. Bring to a boil over medium-high heat.
- Reduce heat to low and simmer, covered, until all of the liquid has been absorbed and the rice is tender, about 20 minutes.
- Stir in the lime juice and cilantro.
- Serve warm.
