Lemon Yogurt Cake
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white sugar
  • 2 eggs
  • 3/4 cup plain yogurt
  • 2 tablespoons lemon zest
  • 1/2 cup melted butter

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan.
  2. In a medium bowl, mix together the flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, beat together the sugar, eggs, yogurt and lemon zest. Beat in the melted butter until smooth.
  4. Stir the dry ingredients into the wet ingredients until just blended.
  5. Pour batter into prepared pan and bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  6. Allow cake to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
