- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white sugar
- 2 eggs
- 3/4 cup plain yogurt
- 2 tablespoons lemon zest
- 1/2 cup melted butter
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round cake pan.
- In a medium bowl, mix together the flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, beat together the sugar, eggs, yogurt and lemon zest. Beat in the melted butter until smooth.
- Stir the dry ingredients into the wet ingredients until just blended.
- Pour batter into prepared pan and bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Allow cake to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
