Ingredients
  • 1 cup wild rice
  • 3 cups vegetable broth
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons lemon juice

Steps
  1. In a medium saucepan, combine the wild rice and vegetable broth.
  2. Bring to a boil over medium-high heat. Reduce heat to low and simmer, covered, for 45 minutes.
  3. In a large skillet, melt butter with olive oil over medium heat. Add onion, celery and garlic. Cook until vegetables are softened.
  4. Stir in thyme, salt and pepper. Cook for 1 minute.
  5. Add cooked wild rice to the skillet and stir to combine.
  6. Stir in lemon juice and remove from heat.
  7. Serve warm.
