Lemon Tartlets
Ingredients
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon lemon zest
  • 3 tablespoons freshly squeezed lemon juice
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, cream together the butter and sugar until smooth.
  3. Beat in the egg, then stir in the lemon zest and juice.
  4. Combine the flour and salt; stir into the batter until just blended.
  5. Drop teaspoonfuls of dough onto ungreased baking sheets.
  6. Bake for 12 to 15 minutes in preheated oven until lightly browned.
  7. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
