- 2 lbs red potatoes, cut into 1-inch pieces
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 tsp pepper
- 2 tsp dried oregano
- 2 tsp lemon zest
- Preheat oven to 400°F.
- In a large bowl, combine potatoes, garlic, olive oil, pepper, oregano and lemon zest.
- Spread the mixture onto a baking sheet and bake for 30 minutes or until potatoes are golden brown.
- Serve hot.
