Lemon Rice Pilaf
Ingredients
  • 1 cup long-grain white rice
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 teaspoon salt
  • 2 cups chicken broth
  • 1/4 cup lemon juice

Steps
  1. In a medium saucepan, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add rice and salt and stir to coat with butter. Cook for 1 minute.
  3. Add chicken broth and lemon juice. Bring to a boil, reduce heat to low, cover and simmer for 20 minutes.
  4. Remove from heat and let stand for 5 minutes before serving.
