- 1 cup long-grain white rice
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/4 teaspoon salt
- 2 cups chicken broth
- 1/4 cup lemon juice
- In a medium saucepan, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
- Add rice and salt and stir to coat with butter. Cook for 1 minute.
- Add chicken broth and lemon juice. Bring to a boil, reduce heat to low, cover and simmer for 20 minutes.
- Remove from heat and let stand for 5 minutes before serving.
