Lemon Quinoa
Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Steps
  1. In a medium saucepan, bring the quinoa and vegetable broth to a boil. Reduce heat to low and simmer for 15 minutes.
  2. Stir in lemon juice, olive oil, and salt. Simmer for an additional 5 minutes.
  3. Remove from heat and let stand for 5 minutes before serving.
