Lemon Meringue Pie
Ingredients
  • 1 9-inch unbaked pie crust
  • 3/4 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 tablespoons butter, melted
  • 2 tablespoons freshly squeezed lemon juice
  • 2 egg yolks, beaten

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, combine the sugar, flour and salt. Stir in the water, melted butter and lemon juice.
  3. Cook over medium heat until thickened and bubbly. Reduce heat and simmer for 2 minutes.
  4. Remove from heat and stir in the beaten egg yolks.
  5. Pour into the prepared pie shell.
  6. Bake at 350 degrees F (175 degrees C) for 15 minutes.
  7. Reduce oven temperature to 325 degrees F (165 degrees C) and bake an additional 25 minutes or until set.
  8. Cool completely before serving.
