- 1 whole chicken, about 4-5 pounds
- 2 tablespoons olive oil
- 1 lemon, cut into wedges
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- Rinse chicken and pat dry with paper towels.
- Place chicken in a roasting pan and rub with olive oil.
- Squeeze lemon wedges over chicken and place them inside the cavity of the bird.
- Sprinkle garlic, oregano, salt and pepper over the top of the bird.
- Roast in preheated oven for 1 hour or until juices run clear.
