Lemon Garlic Riceā€¦
Ingredients
  • 1 cup uncooked white rice
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • Freshly ground black pepper to taste
  • 1/4 cup crumbled feta cheese

Steps
  1. Cook the rice according to package instructions.
  2. In a small bowl, whisk together the olive oil, garlic, lemon juice, salt and pepper.
  3. Pour the dressing over the cooked rice and stir to combine.
  4. Add in feta cheese and stir gently.
  5. Serve chilled or at room temperature.
