- 1 cup couscous
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 teaspoon salt
- In a medium pot, bring the vegetable broth to a boil.
- Add the couscous and stir.
- Cover the pot and remove from heat. Let stand for 5 minutes.
- In a small skillet, heat the olive oil over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Stir in the lemon zest and juice, and salt.
- Fluff the couscous with a fork and pour in the garlic lemon mixture. Stir to combine.
- Serve warm.
