Ingredients
  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 teaspoon salt

Steps
  1. In a medium pot, bring the vegetable broth to a boil.
  2. Add the couscous and stir.
  3. Cover the pot and remove from heat. Let stand for 5 minutes.
  4. In a small skillet, heat the olive oil over medium heat.
  5. Add the garlic and cook until fragrant, about 1 minute.
  6. Stir in the lemon zest and juice, and salt.
  7. Fluff the couscous with a fork and pour in the garlic lemon mixture. Stir to combine.
  8. Serve warm.
