- 1 head of cauliflower
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 3 tablespoons lemon juice
- Cut the cauliflower into florets and place in a food processor. Pulse until the cauliflower resembles rice.
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté for 1 minute.
- Add the cauliflower rice and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally.
- Stir in the lemon juice and cook for another 2 minutes.
- Serve hot.
