Lemon Edamame Pas…
Ingredients
  • 1 lb. spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 cup shelled edamame
  • Zest and juice of 1 lemon
  • 1/4 cup grated Parmesan cheese

Steps
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook, stirring constantly, until fragrant, about 1 minute.
  3. Add the edamame and cook until warmed through, about 2 minutes more.
  4. Drain the pasta and add it to the skillet with the edamame mixture. Stir in the lemon zest and juice. Sprinkle with Parmesan cheese.
  5. Serve warm.
