- 1 lb. salmon fillet, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
- Preheat grill to medium heat.
- In a medium bowl, combine olive oil, lemon zest, lemon juice, garlic and dill.
- Season salmon cubes with salt and pepper to taste.
- Add salmon cubes to the bowl with the marinade and toss to coat.
- Thread salmon cubes onto skewers.
- Grill kebabs for 10 minutes or until cooked through.
