- 1 lb. salmon fillet
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon fresh dill, chopped
- 1/3 cup breadcrumbs
- 2 eggs, lightly beaten
- salt and pepper to taste
- Preheat oven to 375°F.
- In a medium bowl, mix together salmon, olive oil, lemon juice, dill, breadcrumbs and eggs.
- Form into patties and season with salt and pepper.
- Bake for 15 minutes or until cooked through.
- Serve hot.
