Lemon Curd Pie
Ingredients
  • 1 9-inch unbaked pie shell
  • 2 eggs plus 1 egg yolk
  • 1/2 cup sugar
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons butter, softened

Steps
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, beat the eggs and egg yolk until light and fluffy.
  3. Add the sugar and beat until combined.
  4. Add the lemon juice and mix until blended.
  5. Stir in the butter until combined.
  6. Pour into the prepared pie shell and bake for 25 minutes or until just set.
  7. Cool before serving.
