Lemon Cheesecake
Ingredients
  • 2 cups graham cracker crumbs
  • 1/4 cup butter, melted
  • 1/4 cup white sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tablespoon grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch springform pan.
  2. In a medium bowl, mix together the graham cracker crumbs, butter and 1/4 cup of sugar. Press into the bottom of the prepared pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually beat in 1/2 cup sugar until blended. Beat in eggs one at a time. Stir in lemon zest, lemon juice and vanilla extract.
  4. Pour filling into prepared crust.
  5. Bake in preheated oven for 35 minutes or until center is almost set.
  6. Allow cheesecake to cool before serving.
