- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 2 tablespoons lemon juice
- zest of 1 lemon
- 1 cup all-purpose flour
- 3/4 cup blueberries
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
- In a medium bowl, cream together the butter and sugar until smooth. Beat in the baking powder, salt, egg, lemon juice and zest until well blended.
- Stir in the flour until just blended. Fold in the blueberries.
- Spread evenly into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven, or until golden brown. Cool before cutting into bars.
