- 2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 3/4 cup butter, cubed
- 2 eggs
- 1 1/2 cups white sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 cup lemon juice
- zest of 1 lemon
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
- In a medium bowl, mix together 2 cups flour and confectioners' sugar. Cut in butter until mixture is crumbly.
- Press into the prepared pan.
- Bake for 15 minutes in the preheated oven.
- In a medium bowl, whisk together the eggs, white sugar, 3 tablespoons flour, baking powder and lemon juice. Stir in lemon zest.
- Pour over the baked crust.
- Bake for an additional 20 minutes in the preheated oven. Allow to cool before cutting into bars.
- Dust with confectioners' sugar before serving.
