Lemon Bars
Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 3/4 cup butter, cubed
  • 2 eggs
  • 1 1/2 cups white sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 cup lemon juice
  • zest of 1 lemon

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  2. In a medium bowl, mix together 2 cups flour and confectioners' sugar. Cut in butter until mixture is crumbly.
  3. Press into the prepared pan.
  4. Bake for 15 minutes in the preheated oven.
  5. In a medium bowl, whisk together the eggs, white sugar, 3 tablespoons flour, baking powder and lemon juice. Stir in lemon zest.
  6. Pour over the baked crust.
  7. Bake for an additional 20 minutes in the preheated oven. Allow to cool before cutting into bars.
  8. Dust with confectioners' sugar before serving.
