Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 3/4 teaspoon cayenne pepper (optional)
  • 1 lb ground lamb or beef
  • 1 can (14.5 ounces) diced tomatoes with juice or 2 cups fresh diced tomatoes with juice
  • 1/2 cup water or chicken broth (or more to thin out the sauce if necessary)

Steps
  1. Heat the oil in a large skillet over medium-high heat. Add the garlic, onion, and ginger and cook for about 5 minutes until softened.
  2. Add the cumin, coriander, turmeric, garam masala and cayenne pepper (if using). Cook for 1 minute.
  3. Add the ground lamb or beef and cook until browned.
  4. Stir in the tomatoes and water or chicken broth. Bring to a boil then reduce heat to low.
  5. Cover and simmer for 25 minutes stirring occasionally.
  6. Uncover and continue to simmer for an additional 10-15 minutes until desired consistency is reached. Taste and adjust seasoning if necessary.
