- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tablespoon freshly grated ginger
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- 3/4 teaspoon cayenne pepper (optional)
- 1 lb ground lamb or beef
- 1 can (14.5 ounces) diced tomatoes with juice or 2 cups fresh diced tomatoes with juice
- 1/2 cup water or chicken broth (or more to thin out the sauce if necessary)
- Heat the oil in a large skillet over medium-high heat. Add the garlic, onion, and ginger and cook for about 5 minutes until softened.
- Add the cumin, coriander, turmeric, garam masala and cayenne pepper (if using). Cook for 1 minute.
- Add the ground lamb or beef and cook until browned.
- Stir in the tomatoes and water or chicken broth. Bring to a boil then reduce heat to low.
- Cover and simmer for 25 minutes stirring occasionally.
- Uncover and continue to simmer for an additional 10-15 minutes until desired consistency is reached. Taste and adjust seasoning if necessary.
