Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until lightly browned, about 5 minutes. Add the garlic and ginger and cook for another minute.
Add the soy sauce, Gochujang, honey and sesame oil and stir to combine. Cook for 3-5 minutes until the sauce thickens.
Stir in the green onion and remove from heat. Serve with rice or noodles.
