Kimchi Pancakes
Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 3/4 cup cold water
  • 1/2 cup kimchi, chopped

Steps
  1. In a medium bowl, whisk together the flour, baking powder, salt and sugar.
  2. Add the cold water and stir until combined.
  3. Stir in the kimchi.
  4. Heat a non-stick pan over medium heat. Grease with cooking spray.
  5. Drop 1/4 cup of batter into the pan for each pancake. Cook for 2 minutes until lightly browned on one side. Flip and cook for an additional 2 minutes.
  6. Serve warm with desired toppings.
