- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons sugar
- 3/4 cup cold water
- 1/2 cup kimchi, chopped
- In a medium bowl, whisk together the flour, baking powder, salt and sugar.
- Add the cold water and stir until combined.
- Stir in the kimchi.
- Heat a non-stick pan over medium heat. Grease with cooking spray.
- Drop 1/4 cup of batter into the pan for each pancake. Cook for 2 minutes until lightly browned on one side. Flip and cook for an additional 2 minutes.
- Serve warm with desired toppings.
