Kale and Avocado …
Ingredients
  • 1 bunch kale, stemmed and chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and freshly ground black pepper to taste

  1. In a large bowl, combine kale and avocado.
  2. In a small bowl, whisk together olive oil and lemon juice.
  3. Pour over kale and avocado, season with salt and pepper.
  4. Toss to combine.
