Ingredients
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 1/2 cups uncooked white rice
  • 3 cups chicken broth or water
  • 2 tablespoons curry powder

Steps
  1. Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more.
  2. Add rice and stir to coat with oil. Add chicken broth or water and bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  3. Stir in curry powder and cook for 5 minutes more. Fluff with a fork before serving.
