- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 large eggs, lightly beaten
- 1 cup buttermilk
- 4 tablespoons butter, melted and cooled slightly
- 3/4 cup shredded cheddar cheese
- 2 jalapenos, seeded and diced
- Preheat oven to 400°F. Grease an 8-inch square baking pan.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt.
- In a separate bowl, whisk together the eggs, buttermilk and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the cheddar cheese and jalapenos.
- Pour the batter into the prepared baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
