Instant Pot Chili…
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, diced (optional)
  • 2 tablespoons chili powder
  • 2 teaspoons cumin powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 pound ground beef or turkey (or a combination of both)
  • 1 can (14.5 ounces) diced tomatoes with their juices
  • 1 can (15 ounces) kidney beans, drained and rinsed

Steps
  1. Heat the olive oil in the Instant Pot on the sauté setting. Add the onion, bell pepper, garlic and jalapeno pepper and sauté for 3-4 minutes.
  2. Add the chili powder, cumin and oregano and stir to combine. Season with salt and pepper to taste.
  3. Add the ground beef or turkey and cook until browned.
  4. Add the tomatoes with their juices and stir to combine.
  5. Close the lid on the Instant Pot and set it on manual high pressure for 15 minutes.
  6. Once cooking time is complete, use a natural release.
  7. Open the lid of the Instant Pot. Add in the kidney beans and stir to combine.
  8. Serve warm with desired toppings
