- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 1 egg, beaten
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, whisk together the buttermilk and egg.
- Add the wet ingredients to the dry and mix until just combined.
- Heat about 1 inch of oil in a large skillet over medium-high heat.
- Drop spoonfuls of batter into the hot oil and cook until golden brown on both sides.
- Drain on paper towels and serve hot.
