Hoppin' John
Ingredients
  • 1 cup dried black-eyed peas
  • 1/2 teaspoon salt
  • 2 cups water
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/4 cup diced celery
  • 1/4 cup diced green bell pepper
  • 3 cloves garlic, minced
  • 3/4 teaspoon dried thyme leaves
  • 3/4 teaspoon dried oregano leaves
  • 3/4 teaspoon ground cumin

Steps
  1. Rinse and sort the peas, then place in a medium saucepan with the salt and water. Bring to a boil, reduce heat to low, cover, and simmer for 1 1/2 hours until the peas are tender. Drain any remaining liquid.
  2. Heat the oil in a large skillet over medium heat. Add the onion, celery, bell pepper, garlic, thyme, oregano, and cumin. Cook for 6 to 8 minutes until vegetables are softened.
  3. Add cooked black-eyed peas to skillet and cook an additional 5 minutes. Serve hot over cooked rice.
