Honey-Lemon Muffi…
Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons butter, melted and cooled slightly
  • 3/4 cup honey
  • 2 large eggs, lightly beaten
  • 1/3 cup freshly squeezed lemon juice (about 1 large lemon)
  • 1 tablespoon grated lemon zest

Steps
  1. Preheat oven to 375°F. Grease 12 muffin cups or line with paper liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together the melted butter, honey, eggs, lemon juice and zest until combined.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. Divide the batter evenly among the prepared muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
