- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons butter, melted and cooled slightly
- 3/4 cup honey
- 2 large eggs, lightly beaten
- 1/3 cup freshly squeezed lemon juice (about 1 large lemon)
- 1 tablespoon grated lemon zest
- Preheat oven to 375°F. Grease 12 muffin cups or line with paper liners.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, whisk together the melted butter, honey, eggs, lemon juice and zest until combined.
- Add the wet ingredients to the dry ingredients and stir just until combined.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
