- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 2 large eggs, lightly beaten
- 1 1/2 cups buttermilk
- 4 tablespoons butter, melted and cooled slightly
- 3 tablespoons honey
- Preheat oven to 375°F. Grease an 8-inch cast iron skillet with additional butter.
- In a medium bowl, whisk together the cornmeal, flour, baking powder, salt and baking soda.
- In a separate bowl, whisk together the eggs, buttermilk, melted butter and honey until combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix.
- Pour the batter into the prepared skillet and bake for 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes before serving.
