Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon baking soda
  • 2 large eggs, lightly beaten
  • 1 1/2 cups buttermilk
  • 4 tablespoons butter, melted and cooled slightly
  • 3 tablespoons honey

Steps
  1. Preheat oven to 375°F. Grease an 8-inch cast iron skillet with additional butter.
  2. In a medium bowl, whisk together the cornmeal, flour, baking powder, salt and baking soda.
  3. In a separate bowl, whisk together the eggs, buttermilk, melted butter and honey until combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix.
  5. Pour the batter into the prepared skillet and bake for 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. Allow to cool for 10 minutes before serving.
