Honey-Butter Corn…
Ingredients
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1/4 cup honey
  • 3 tablespoons butter, melted and cooled slightly
  • 3/4 cup milk

Steps
  1. Preheat oven to 375°F. Grease 12 muffin cups or line with paper liners.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder and salt.
  3. In a separate bowl, whisk together eggs, honey and butter.
  4. Add milk and stir until blended.
  5. Add wet ingredients to dry ingredients and stir just until combined.
  6. Divide batter among prepared muffin cups.
  7. Bake for 20 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Cool in pan for 5 minutes before transferring to a wire rack.
