Ingredients
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 pounds carrots, peeled and cut into 1/4-inch thick slices

Steps
  1. In a small bowl, whisk together honey, mustard, olive oil, thyme, garlic powder, salt and pepper.
  2. In a large skillet over medium heat, add carrots. Cook for about 5 minutes or until tender.
  3. Add the honey mustard mixture to the skillet. Stir to coat the carrots.
  4. Continue cooking for about 5 minutes or until the sauce has reduced and is coating the carrots.
  5. Serve hot.
