- 3 tablespoons honey
- 3 tablespoons Dijon mustard
- 1 teaspoon olive oil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 pounds carrots, peeled and cut into 1/4-inch thick slices
- In a small bowl, whisk together honey, mustard, olive oil, thyme, garlic powder, salt and pepper.
- In a large skillet over medium heat, add carrots. Cook for about 5 minutes or until tender.
- Add the honey mustard mixture to the skillet. Stir to coat the carrots.
- Continue cooking for about 5 minutes or until the sauce has reduced and is coating the carrots.
- Serve hot.
