- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup honey
- 2 jalapenos, seeded and finely chopped
- 2 eggs, lightly beaten
- 3/4 cup buttermilk or sour cream
- Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking pan.
- In a medium bowl, mix together the cornmeal, flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, mix together the honey, jalapenos, eggs and buttermilk or sour cream.
- Add the wet ingredients to the dry ingredients and stir until just combined. Pour into the prepared pan.
- Bake for 25 to 30 minutes in the preheated oven until golden brown. Cool before cutting into squares.
