- 2 lbs sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon minced garlic
- 1 teaspoon salt
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the sweet potatoes, olive oil, honey, garlic and salt.
- Spread the sweet potatoes onto the prepared baking sheet.
- Roast for 20 minutes or until fork-tender.
- Serve warm.
