- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons butter, melted and cooled slightly
- 3/4 cup honey
- 3/4 cup buttermilk or sour milk (see note)
- 2 large eggs, beaten
- Preheat oven to 375°F. Grease and flour an 8-inch square baking pan.
- In a medium bowl, stir together the cornmeal, flour, baking powder, baking soda and salt.
- In a separate bowl whisk together the butter, honey, buttermilk or sour milk and eggs.
- Stir the wet ingredients into the dry ingredients just until combined.
- Pour batter into prepared pan and spread evenly.
- Bake for 25 minutes or until golden brown and a toothpick inserted in center comes out clean.
- Let cool in pan on a wire rack for 10 minutes before serving.
