Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted and cooled slightly
  • 3/4 cup honey
  • 3/4 cup buttermilk or sour milk (see note)
  • 2 large eggs, beaten

Steps
  1. Preheat oven to 375°F. Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, stir together the cornmeal, flour, baking powder, baking soda and salt.
  3. In a separate bowl whisk together the butter, honey, buttermilk or sour milk and eggs.
  4. Stir the wet ingredients into the dry ingredients just until combined.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 25 minutes or until golden brown and a toothpick inserted in center comes out clean.
  7. Let cool in pan on a wire rack for 10 minutes before serving.
