- 2 cups rolled oats
- 1 cup shredded coconut
- 1/2 cup chopped nuts
- 1/4 cup honey
- 1/4 cup brown sugar
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 3/4 cup semi-sweet chocolate chips
- Preheat oven to 350°F.
- In a large bowl, mix together oats, coconut, and nuts.
- In a small saucepan, heat honey, brown sugar, and oil over medium heat until sugar dissolves.
- Remove from heat and stir in vanilla extract and cinnamon.
- Pour the honey mixture into the oat mixture and stir until combined.
- Spread the mixture onto a parchment-lined baking sheet and press down firmly with a spatula.
- Bake for 25 minutes or until golden brown.
- Let cool completely before cutting into bars.
- Sprinkle chocolate chips over top and press lightly into bars to adhere.
