Homemade Granola …
Ingredients
  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup chopped nuts
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup semi-sweet chocolate chips

Steps
  1. Preheat oven to 350°F.
  2. In a large bowl, mix together oats, coconut, and nuts.
  3. In a small saucepan, heat honey, brown sugar, and oil over medium heat until sugar dissolves.
  4. Remove from heat and stir in vanilla extract and cinnamon.
  5. Pour the honey mixture into the oat mixture and stir until combined.
  6. Spread the mixture onto a parchment-lined baking sheet and press down firmly with a spatula.
  7. Bake for 25 minutes or until golden brown.
  8. Let cool completely before cutting into bars.
  9. Sprinkle chocolate chips over top and press lightly into bars to adhere.
