Hollandaise Sauce
Ingredients
  • 4 egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup melted butter
  • Salt and pepper to taste

Steps
  1. In a medium bowl, whisk together the egg yolks and lemon juice until blended.
  2. Place the bowl over a pan of simmering water and continue to whisk until mixture thickens.
  3. Slowly add the melted butter while continuing to whisk.
  4. Season with salt and pepper to taste.
