- 1 (3-4 pound) roasting chicken
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, mix together garlic powder, onion powder, oregano, basil, olive oil and salt and pepper.
- Rinse chicken and pat dry.
- Rub the seasoning mixture over the chicken inside and out.
- Place in a roasting pan.
- Roast chicken for 1 1/2 hours in the preheated oven, or until juices run clear.
- An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C).
