Ingredients
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups uncooked long grain white rice
  • 3 1/2 cups chicken broth
  • 2 tablespoons chopped fresh parsley or 1 teaspoon dried parsley flakes
  • 2 tablespoons grated Parmesan cheese

Steps
  1. Melt butter in a large saucepan over medium heat. Add onion, salt and pepper; cook and stir until onion is tender. Stir in rice; cook and stir for 2 minutes.
  2. Add chicken broth and parsley; bring to a boil. Reduce heat to low, cover and simmer for 20 minutes.
  3. Stir in Parmesan cheese before serving.
