- 2 lbs. potatoes, cut into 1-inch cubes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine potatoes, olive oil, garlic powder, oregano, thyme and salt.
- Toss until potatoes are evenly coated.
- Spread potatoes in an even layer on the prepared baking sheet.
- Bake for 25 minutes or until golden brown and crispy.
- Serve warm.
