Ingredients
  • 2 pounds potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the potatoes in a large bowl.
  3. Drizzle the olive oil over the potatoes and add the thyme, oregano, salt, and pepper; toss to coat.
  4. Transfer the potatoes to a baking sheet.
  5. Bake in preheated oven for 25 minutes or until golden brown and tender.
  6. Serve hot.
