Ingredients
  • 2 lbs. carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Steps
  1. Preheat oven to 400°F.
  2. In a large bowl, combine carrots, oil, garlic powder, oregano, thyme and salt and pepper.
  3. Toss to combine.
  4. Spread carrots in an even layer on a baking sheet.
  5. Roast for 25 minutes or until tender.
  6. Serve warm.
