- 2 lbs. carrots, peeled and cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Preheat oven to 400°F.
- In a large bowl, combine carrots, oil, garlic powder, oregano, thyme and salt and pepper.
- Toss to combine.
- Spread carrots in an even layer on a baking sheet.
- Roast for 25 minutes or until tender.
- Serve warm.
